Buttermilk: Nutrition Facts and Benefits

By |

Buttermilk is the liquid left over when making butter from milk, thus the name. While it's not exactly a health drink, buttermilk is still a better alternative than some other drinks on the market.
The methods for making buttermilk have changed over the years. In the old days, buttermilk was fermented by naturally occurring bacteria as unpasteurized butter cream sat for a length of time before churning. This process is called "ripening."
"Nowadays, as all milk and cream are pasteurized (which kills the naturally occurring bacteria), buttermilk is made by reintroducing Lactobacillus acidophilus, the probiotic bacteria that gives buttermilk its sour taste," said Dr. Vincent Pedre, author of the book "Happy Gut" and an internist in New York City.

Buttermilk is also used to make baked goods and other foods, such as buttermilk biscuits and pancakes. Buttermilk adds a tangy flavor to baked goods, but that isn't the only reason why it is a popular ingredient. The acid in buttermilk also breaks down long strands of gluten in the dough. This makes baked goods more tender, according to Fine Cooking Magazine.
"Did you know that buttermilk actually has less calories and fat per serving than whole milk," said Rebecca Shenkman, director at the Villanova College of Nursing's MacDonald Center for Obesity Prevention and Education (COPE). "One cup of buttermilk contains around 100 calories and 2.2 grams of fat (1.3 grams being saturated) whereas whole milk contains around 150 calories and 8 grams of fat (5 of which are saturated)."
Buttermilk also contains a wide range of vitamins and minerals, including calcium, iron, magnesium, phosphorus, potassium, sodium and zinc, according to the U.S. Department of Agriculture (USDA).
This sour tasting drink has also been shown to have some health benefits. "A recent study showed buttermilk reduced the growth of colon cancer cells," said Dr. Jennifer Jackson, an internist at Ascension Via Christi Health. "That's one small step for man, one giant leap for bovine breastmilk."
Another study published by the journal Nutrition found that drinking buttermilk for a short period of times can reduce blood pressure in some individuals.
Also, as mentioned above, buttermilk contains probiotic bacteria. Other cultured drinks and foods like kefir and yogurt also contain probiotics. This type of bacteria has been found to have many health benefits, including adding in digestion and helping with irritable bowel syndrome, according to the National Institutes of Health.
Though buttermilk has its benefits, it should be consumed in moderation. Estrogen found in dairy products may be related to hormone-type cancers, including cancers of the breast and prostate. Also, if you are allergic or sensitive to milk, stay away from buttermilk. Even though it isn't technically milk, it is a milk product and can still cause a reaction, according to the Mayo Clinic.

Flood: Delta govt opens more water channels in Asaba

By Festus Ahon ASABA—Delta State
Government has restated its commitment to ensure unhindered flow of flood waters in Asaba and its environs whenever it rains. Director General, Special Programmes, Chief Frank Omare, gave the assurance while supervising the opening up of blocked drains and water channels in parts of the capital city. He said that over 550 tipper loads of sand had been excavated from a one-kilometre stretch of drains between the High Court Road Junction and the Inter-Bau Roundabout. Omare, who led members of his team on the exercise to clear the drains on the Okpanam Road, said that about 100 labourers were working on various sectors of the drains on daily basis. At press time, bulldozers and pay-loaders were seen excavating the silt dug out by the labourers into waiting tippers which would convey them to undisclosed areas. Vehicles coming from Okpanam Road were made to drive against traffic to create more work space for the team which was working on the stretch between state Police Command Headquarters and Inter-Bau Roundabout. Omare sad that after achieving a major breakthrough on the drains on one side of Okpanam Road, the need to carry out same exercise on the other side of the road became inevitable. He said that efforts were being made to connect the drains to the other side of Summit Road to channel the water into Anwai River. Omare described the exercise as successful and revealing, pointing out that Deltans were appreciative of the efforts of the state government towards clearing blocked drains in the state capital. He assured residents that when the drains are fully cleared, the flooding being experienced on the DBS Road and DDPA would be a thing of the past as water would move freely down to the nearby river.

OLEH—YOUNGER brother of the Ovie of Igbide Kingdom, Prince Palmer Obukeni, is feared dead, while five indigenes of Okpolo-Enwhe community, both in Isoko South Local Government Area, Delta State are reportedly missing, in a fresh communal clash over a protracted land dispute. A source from Okpolo-Enwhe community alleged that some of their women who went to harvest cassava at Okpaoworo and Aghahave bushes were allegedly ambushed and attacked by warriors from Igbide community. “After a rescue team was mobilised to the bushes, five persons could not be accounted for,” the source who craved anonymity said, adding that “the carts meant to carry the harvested cassava home were found abandoned without a trace of their owners.” Denying knowledge of the killing of Prince Palmer Obukeni, the source said: “They (Igbide people) are the aggressors. They have been laying claim to the land since 1967 and have been violently attacking our people who go to farm in that bush.” Meanwhile, a source from Igbide community, who also preferred anonymity, said no indigene of Okpolo-Enhwe community was missing, saying, “That is a blatant lie. They (Okpolo-Enwhe people) attacked our people and nobody is missing there. “Some of our women including the wife of Prince Palmer Obukeni who went to their farms were ambushed by Okpolo-Enwhe people. The prince was among those who went on a rescue mission in the bush and on getting there, he was kidnapped and shot dead. “They are the aggressors. Some weeks back, they also shot dead a woman with six and a half months old pregnancy. None of their persons is missing.” Contacted, Police Public Relations Officer of the state Police Command, Celestina Kalu, said: “After a visit to the two communities, no sign of violence to suggest any clash was evident. However, there are counter allegations of killings. Efforts to confirm the scene of the crime proved futile. “King of Igbide and the President-General of the community alleged that one Parma Obukeni was killed. No scene to prove their allegation was seen, no corpse was recovered and no person injured. The peace committee set up to look into the conflict is still on the matter.” The hostilities which broke out on May 6, 2016 after over four decades of legal battle, has so far, resulted in the death of several persons while over seven houses in the communities were razed.

The 33-year-old Olympian was rounding the bend in first place, traveling at nearly 50 mph, according to SB Nation, when she skidded off the slippery road and flipped over into a ditch.
In video clips of the cringeworthy moment, spectators can be heard gasping as van Vleuten remains motionless on the ground. American competitor Mara Abbott zoomed past van Vleuten seconds later, but she lost steam in the final leg of the race and van Vleuten’s teammate Anna van der Bergen took home the gold.
According to The Guardian, the Dutch cycling federation later tweeted that Vleuten “appears to be OK” after her crash; she was rushed to the hospital shortly after her terrifying tumble, and is currently in the hospital getting additional tests.

Bow Wow Announces Retirement From Rap, Will Release One More Album

Bow Wow is getting ready to say goodbye to the rap game. He plans on dropping one more album, "NYLTH," which he says will be produced by Snoop Dogg.

Shad Moss, who currently raps as Bow Wow, has announced his retirement from music. Now 29, he told his fans, "I just can't see myself at 30 years old rapping." Before he hangs up the mic for good, he plans to release one more album -- maybe before his 30th birthday on March 9. He revealed that his final album will be called NYLTH (perhaps an acronym) and that it will be executive produced by Snoop Dogg, who was the man who first discovered him and who gave him the name Lil' Bow Wow, which he used for his first two albums.
Moss' first release came at age 12 with 1999's "Stick Up," featuring his mentor Jermaine Dupri, who signed him to So So Def Recordings. The next year, Lil' Bow Wow released his debut album, Beware of Dog, which was certified double-platinum within six months of its release.
Bow Wow claims that he "made over 20 million off rap" and sold over 10 million records. "Retirement only means that it is time for a new adventure," he tweeted. Moss told hip-hop personality Taxstone that he's currently involved in three TV shows. His past TV gigs include "CSI: Cyber," "106 & Park," and "Entourage." He's starred in films such as "Like Mike," "Roll Bounce," and "Lottery Ticket."
Congrats to Bow Wow on nearly two decades in the game!

1 of 2 Skydivers Killed in California Was First-Time Jumper

The mother of an 18-year-old man who was one of two skydivers who died plummeting into a northern California vineyard said her son was jumping for the first time.
Francine Salazar told a newspaper Sunday that she accompanied her son Tyler Turner to the Lodi Parachute Center as he and several of his friends celebrated a birthday.
"Before he got on the plane, he knelt down and prayed, made his peace with God, and then turned around and gave me a great big, huge hug," Salazar told the Merced Sun-Star (http://bit.ly/2aZsest). "He said, 'I love you, Mom,' and then he got on the plane."
She said she never saw her son come down with his instructor because she couldn't tell where they were in the distance and didn't know the color of their parachute.
The parachute did not open, and the two hit the ground, authorities said.
San Joaquin County sheriff's officials have not identified the instructor killed Saturday in Lodi, 85 miles east of San Francisco.
Bill Dause, owner of the Parachute Center, said he was a veteran who had about 700 previous jumps.
Salazar said she paid to have her son's jump videotaped. However, Federal Aviation Administration investigators took the tape and all the equipment used in the jump to determine what happened.
Salazar said she was concerned before the jump because an instructor told her son and his friends they didn't need to finish watching the safety video shown beforehand.
Dause told the Sun-Star he believed the group watched the entire video because it plays repeatedly at the center.
"... I'm pretty sure they saw it," he said. "But it wouldn't have made any difference (if they didn't). It was an unfortunate accident."
Dause told Sacramento television station KCRA on Saturday that it appeared "something may have gone out of sequence in the jump."
The wind and other conditions were perfect at the time of the jump, Dause said. "Conditions had nothing to do with it," he said.
The skydive center was in the news in May, when a small plane carrying 17 skydivers took off from there and landed upside-down after clipping a pickup. The worst injuries were minor cuts and scrapes.
In February, the Lodi News-Sentinel reported that a solo skydiver had died after a parachute malfunction at the center.

Iran Executes Nuclear Scientist Who Was Convicted of Spying

Iran executed a nuclear scientist convicted of spying for the United States, an official said Sunday, acknowledging for the first time that the nation secretly detained and tried a man who was once heralded as a hero.

Shahram Amiri defected to the U.S. at the height of Western efforts to thwart Iran's nuclear program. When he returned in 2010, he was welcomed with flowers by government leaders and even went on the Iranian talk-show circuit. Then he mysteriously disappeared.
He was hanged the same week that Tehran executed a group of militants, a year after Iran agreed to a landmark accord to limit uranium enrichment in exchange for the lifting of economic sanctions.
Amiri first vanished in 2009 while on a religious pilgrimage to Muslim holy sites in Saudi Arabia. A year later, he reappeared in a series of contradictory online videos filmed in the U.S. He then walked into the Iranian-interests section at the Pakistani Embassy in Washington and demanded to be sent home.
In interviews, he described being kidnapped and held against his will by Saudi and American spies. U.S. officials said he was to receive millions of dollars for his help in understanding Iran's nuclear program.
Iranian judiciary spokesman Gholamhosein Mohseni Ejehi said Amiri "had access to the country's secret and classified information" and "had been linked to our hostile and No. 1 enemy, America, the Great Satan."
The spokesman told journalists that Amiri had been tried in a death-penalty case that was upheld by an appeals court. He did not explain why authorities never announced the conviction, though he said Amiri had access to lawyers.
News about Amiri, born in 1977, has been scant since his return to Iran. Last year, his father told the BBC's Farsi-language service that his son had been held at a secret site. Ejehi said Amiri's family mistakenly believed he received a 10-year prison sentence.
On Tuesday, Iran announced it had executed a number of criminals, describing them mainly as militants from the country's Kurdish minority. Then an obituary notice for Amiri circulated in his hometown of Kermanshah, a city 500 kilometers (310 miles) southwest of Tehran, according to the Iranian pro-reform daily newspaper Shargh.
Manoto, a private satellite television channel based in London believed to be run by those who back Iran's ousted shah, reported Saturday that Amiri had been executed. BBC Farsi also quoted Amiri's mother saying her son's neck bore ligature marks suggesting he had been hanged by the state.
The Associated Press could not immediately reach Amiri's family.
His disappearance came as Western countries stepped up their efforts to impede Iran's nuclear program under the government of hard-line President Mahmoud Ahmadinejad. The U.S. actively tried to recruit nuclear scientists to defect. Later, four Iranian nuclear scientists were assassinated between 2010 and 2012, and Iran blamed the slayings on Israel and the West.
The Stuxnet computer virus, widely believed to be a joint U.S.-Israeli creation, also disrupted thousands of centrifuges at a uranium enrichment facility in Iran at the same time.
In June 2010, a shaky online video emerged of Amiri saying he had been kidnapped by American and Saudi agents and was in Tucson, Arizona.
A short time later, he appeared in a professionally shot online video near a chess set, saying he wanted to earn a doctorate in America and return to Iran if an "opportunity of safe travel" presented itself. His wife and son remained behind in Iran.
"I have not done any activity against my homeland," he said. But soon, another clip contradicted that, and he appeared at the Pakistani Embassy.
Hillary Clinton, who was then the secretary of state, stressed that Amiri had been in America "of his own free will."
"He is free to go," she said.
U.S. officials at the time told the AP that Amiri was paid $5 million to offer the CIA information about Iran's nuclear program, though he left the country without the money. They said Amiri, who ran a radiation-detection program in Iran, traveled to the U.S. and stayed there for months by choice.
Analysts abroad suggested Iranian authorities may have threatened Amiri's family back in Iran, forcing him to return.
On his return from the U.S., Amiri was greeted at airport by high-ranking government officials and was invited to TV talk shows where he explained how he bypassed a U.S. trap to get home. Many newspapers published accounts of his return on their front pages and some suggested a movie be made from his story.
He said Saudi and American officials had kidnapped him while he visited the Saudi holy city of Medina. He said Israeli agents were present at his interrogations and that that CIA officers offered him $50 million to remain in America.
"I was under the harshest mental and physical torture," he said.
Amiri's case indirectly found its way back into the spotlight in the U.S. last year with the release of State Department emails sent and received by Clinton, now the Democratic presidential candidate. The release of those emails came amid criticism of Clinton's use of a private account and server that has persisted into her campaign against Republican candidate Donald Trump.
An email forwarded to Clinton by senior adviser Jake Sullivan on July 5, 2010 — just 10 days before Amiri returned to Tehran — appears to reference the scientist.
"We have a diplomatic, 'psychological' issue, not a legal one. Our friend has to be given a way out," the email by Richard Morningstar, a former State Department special envoy for Eurasian energy, read. "Our person won't be able to do anything anyway. If he has to leave, so be it."
Another email, sent by Sullivan on July 12, 2010, appears to obliquely refer to the scientist just hours before his appearance at the Pakistani Embassy became widely known.
"The gentleman ... has apparently gone to his country's interests section because he is unhappy with how much time it has taken to facilitate his departure," Sullivan wrote. "This could lead to problematic news stories in the next 24 hours."

Kidnapped monarch finally released Oba Goriola Oseni, the Oniba of Iba Community has reportedly returned safely to his family following the payment of a ransom fee.

KidnappingThe Oniba of Iba community, Oba Goriola Oseni, who was kidnapped alongside a 3-month-old baby on July 18, has been released at long last.

The Abducted Lagos monarch was reportedly released on Saturday, August 6, 2016, after weeks in the hands of his captors.
One of the monarch's son, Kabiru Oseni, confirmed that the 74-year-old has been released, disclosing that he had returned via a jetty in the area.
Speaking with a correspondent of The Punch, a source reportedly disclosed that a ransom fee had been paid to secure the Monarch's safe return.
“The Oba did not come in like he was rescued by the police. His coming back was without fanfare. He just walked into the community. It is in doubt that the police were involved in the rescue. The kidnappers are believed to have let go of him on their own will after the payment of a ransom. We do not yet know the amount paid.”
The abductors who had initially demanded the sum of N500m later reduced the amount to N40m although it is unclear if that was the sum paid.
We can only be grateful for his safe return, although the fate of the baby who was kidnapped with him at the time is still unknown.

PRODUCTION OF ANNONA MURICATA JUICE (SOURSOP) AND ITS ASCORBIC ACID DETERMINATION

PRODUCTION OF ANNONA MURICATA JUICE (SOURSOP) AND ITS ASCORBIC ACID DETERMINATION

CHAPTER ONE
INTRODUCTION
1.     BACKGROUND OF THE STUDY
Soursop (Annona Muricata) also known as guanabana belonging to the family Annonaceac and and indigenous to tropical north and south America is one of the exotic frits prized for its very pleasant, sub acid, arorratic and juicy flesh (morton et al, 1987). The fruit haroly grows intemperate countries (Janick et al, 1969) and was introduced in china, Australia and Africa (Anon, 1975) and thrives in the rain forest zone of West Africa (Glendhil et al, 1972). Observation showed that it grows throughout southern Nigeria and it is mostly Eater as fresh fruits.
According to Dalzell (1948), soursop has a pleasant aroma which is taken as desert or made into arefreshing beverage. It consists of a large heart-shaped edible fruit of various sizes. However, it is highly susceptible to spoilage, softens very rapioly during ripening and becomes mushy and difficult to consume fresh. Soursop is equally rejected at market because of external injury or uneven shape and size (Umme et al, 2001).
The economic and nutritional importance of fruits to nigerias cannot be over emphasized. It is a major source of income for farmers who cultivate them for fresh. Soursopleke other tropical fruits serves as a potential source of raw materials for fruit products such as juice, beverages, wines, jellies etc (Tressler and Ardel 2003).
Fruit Juice is the liquid naturally contained in fruit or vegetable tissue fruit and can be prepared mechanically by squeezing fresh fruits or fresh vegetables. Soursop juice is diuretic while other parts have antibacterial, anti- cancerous, astringent, sedative and other properties (Taylor 1998).
According to hedick (2000), soursop juice serves as non-alcoholic beverage drinks for thirst guenching, for pleasure and for supplying vitamin especially vitamin c.
Vitamin c or ascorbic acid is one of the major nutrient in soursop fruit and other fruits and does great work in the body. Ascorbic acid plays an important role in the tissues as an anti-oxidant, curing of scurvy, intercellular cementing to build connective tissues and help in general body metabodism (Schneeman, 1990).
In Nigeria tobody, most of the juices made from natural sources have increased and the availability of fruits is short lived due to their seasonal and highly perishable nature. A large percentage of the fruits are consumed directly as they come from the orchards. Due to lack of appropriate storage facilities, up to 30-60% losses are recorded annually during peak harvesting seasons. In order to minimize these losses, there is need to preserve and store them from time of harvest through the period of scarcity, for the purpose of retaining them as foods, an article of trade and to make them available at off season period (Tressler et al, 1980).
1.2 STATEMENT OF PROBLEM
Owing to the fact that there is a good demand for fruits al all times of the year, a demand which is not adequately met at present and the production of fruit crops is seasonal. Thus there is a need to preserve and store them so as to make them available in and out of season in order to meet their demands by people.
1.3 OBJECTIVE OF THE STUDY
In view of the fact that soursop is a seasonal fruit and as a fruit will also contain essential minerals which are beneficial to man. The aim of this research is as follows.
       i.            Production of fruit juice from edible part of Annona Muricata (Soursop).
ii.            To determine the ascorbic acid content of the fruit juice produced.
iii.            To compare the ascorbic acid content of the juice produced with that of a commercial juice.
                             4.            SIGNIFICANCE OF THE STUDY
This research would make data available to scientist and chemical technologist on the fruit that could be consumed if vitamin C is required. The result of this work will also be beneficial to man due to subsequent availability of soursop fruit juice in and off season of the fruit.
In addition, the result of this research will highly be of an advantage to patients that have infections like urinary tract infection, would infection, scurvy etc which soursop have being found to have given a final blow
1.5 SCOPE OF THE STUDY
The scope of this study is restricted under the following headings
       i.            Collection of soursop fruit sample
ii.            Production of Annona Muricata (Soursop) juice
iii.            Determination of acid content of the soursop juice produced.
iv.            Comparism between the ascorbic acid content of the soursop juice to that of a commercial juice from the market.
